Which classic grape varietal is the most underrated?
Chardonnay, it’s absolutely perfect as it won’t stain my beard!
What kind of flavors inspire you most?
I look for notes of bright citrus, stone fruit and a kiss of brioche in most of what I drink. Also orchard fruits like apple and pears that show up in wines that have some age on them give of this amazingly rustic essence like a 20yr+ Savennières. Everything has to be in balance and not too overdone or I get weirded out.

Vintage Champagne of course! Bright complex flavors along with the tiniest of bubbles makes for a perfect pairing. It powers through the richness that pork brings to the table while making you want another bite!
