Farmers are the very heart of the Cochon555 tour. As part of our new Spotlight series for guests past and present, we take you behind the scenes for a Q&A with those who provide the beautiful and delicious pigs for our competition. Meet Aaron Lorenz of White Oak Pastures from our Atlanta event.
What is your farming philosophy?
Farm in the way the nature intended.  We are managing a complex system, and nature is the great teacher of  complexity.
What is it that intrigues you about heritage breed pigs?
I like the variety of flavors that come from heritage pigs.  Peanut fed Berkshires are top of my list.
What is your favorite pork cut and way to cook it?
I love a good rib chop seared quickly on the grill.  Season with salt, pepper, garlic, cumin and paprika and we’re good to go.
