Farmers are the very heart of the Cochon555 tour. As part of our new Spotlight series for guests past and present, we take you behind the scenes for a Q&A with those who provide the beautiful and delicious pigs for our competition. Meet Jenni Harris of White Oak Pastures from our Atlanta event.
What is your farming philosophy?
WE FEEL THAT MANAGING OUR FARM AS WHOLE IS THE BEST PRACTICE FOR THE LAND, ANIMALS AND STAFF. WE TAKE PRIDE IN A MULTI-SPECIES, VERTICALLY INTEGRATED PRODUCTION SYSTEM THAT ALLOWS US TO RAISE AND SLAUGHTER ANIMALS WITH HIGH ANIMAL WELFARE AND ENVIRONMENTAL SUSTAINABILITY.
What is it that intrigues you about heritage breed pigs?
WE LOVE WHAT THE PIGS DO TO THE SOIL. THEIR STRONG NOSES ARE GREAT FOR TRANSITIONING OVERGROWN LAND INTO PRODUCTIVE PASTURES.
What is your favorite pork cut and way to cook it?
AT HOME, WE ENJOY COOKING BOSTON BUTTS THE MOST. LONG SLOW ROASTED BBQ FOR SANDWICHES IS A POPULAR WEEKLY OCCURRENCE.
