What is your farming philosophy?
Aside from the absence of hormones and antibiotics in the feed, from confinement and short cuts, the practices any farmer worth his salt should be implementing, its to create as natural an environment as is possible for the animal. You can waste a lot of time and energy trying to keep a pig from being a pig. The farmer should adapt, not the animal.
What is it that intrigues you about heritage breed pigs?
Heritage breed pigs have survived homogenization, against the odds.
What is your favorite pork cut and way to cook it?
Braised cheeks
