Farmers are the very heart of the Cochon555 tour. As part of our new Spotlight series for guests past and present, we take you behind the scenes for a Q&A with those who provide the beautiful and delicious pigs for our competition. Meet Felix Florez of Black Hill Meats from our Houston event.
What is your farming philosophy?
We believe that farming and ranching should take place naturally with great care and attention. Cutting corners, manipulating growth and treating livestock poorly is unacceptable and plays no part in our philosophy.
What is it that intrigues you about heritage breed pigs?
Heritage breed hogs offer so much variety, marbling, quality and flavor. They are what all pork should be.
What is your favorite pork cut and way to cook it?
My favorite cut of pork, is collar. The meat to fat ratio, color, flavor and texture is perfect. A 24 hour sous vide, followed by a cast iron sear is my definition of a perfect meal.
