As part of our new Spotlight series for guests past and present, we take you behind the scenes for a Q&A with those who provide the beautiful and delicious pigs for our competition. Meet Charlene Carlson of Napa Valley Swine from our San Francisco Event.
What is your farming philosophy?
We strive to raise our Heritage pigs in a humanely, loving and healthy environment so we are able to offer a healthy tasty alternative to commercially raised pork. They get to be happy and do what pigs are suppose to do.
What is it that intrigues you about heritage breed pigs?
I am intrigued by how friendly and gently our Heritage breeds are. They are so easy to handle and deal with.
What is your favorite pork cut and way to cook it?
My favorite cut is BACON. you simply cook it slow and low and it is delicious.
