It may not have the deepest roots in the classic cocktail world, but the Tipperary is one of the most delicious and overlooked cocktails out there.

What kind of flavors inspire you most?
I’m a big fan of tasting length. Fruits that start tart and sweeten directly after. Bitter on the front, smooth finish.

Choose a drink to match with pork – and why?
I love a nice dry Riesling with pork-chops, anything with a high level of acidity to cut through the fat.
