Which classic cocktail is the most underrated?
The most underrated cocktail by far is the Vieux Carré. There are so many different variations of that drink and I feel like the way a bartender makes theirs really is expressive of their style and palette with cocktails. That and it’s Cognac and Rye Whiskey… How can you go wrong?

What kind of flavors inspire you most?
I’ve always been very inspired and fascinated with the marriage of spirits and all sorts of teas from around the world. I love tea and I think you’d be hard pressed to find a tea that doesn’t “work” within in a cocktail.

Choose a drink to match with pork – and why?
You said pork so I’m going with pairing a cocktail with miso pork ramen. I’d like to drink something that would cut the fattiness and cleanse your palette, but not overpower the flavors of the ramen. To me, there couldn’t be a better cocktail to do all of those things than a classic gin martini with orange bitters and lemon oils expressed over the top.
