Q&A with Nashville Cattle Co.

Adam Deal, Nashville Cattle Co., Nashville
Farmers are the very heart of the Cochon555 tour. As part of our new Spotlight series for guests past and present, we take you behind the scenes for a Q&A with those who provide the beautiful and delicious pigs for our competition. Meet Adam Deal of Nashville Cattle Co. from our Nashville event.
What is your farming philosophy?
Aside from the absence of hormones and antibiotics in the feed, from confinement and short cuts, the practices any farmer worth his salt should be implementing, its to create as natural an environment as is possible for the animal. You can waste a lot of time and energy trying to keep a pig from being a pig. The farmer should adapt, not the animal.
What is it that intrigues you about heritage breed pigs?
Heritage breed pigs have survived homogenization, against the odds.
What is your favorite pork cut and way to cook it?
Braised cheeks
The root of all Cochon555 events is the community of small and family farmers whose sacrifice and talent results in the heritage breed pigs we celebrate. For more information about Adam and Nashville Cattle Co., please visit  http://nashvillecattleco.com.
