Which classic cocktail is the most underrated?
I think the daiquiri is probably the most underrated as it’s been the most bastardized on misunderstood.

What kind of flavors inspire you most?
I’m a big fan of unexpected flavors in dishes and in cocktails. Sometimes a steak is just a steak, but in the right hands, with the right treatment and seasoning it can take on a completely different role in a dish. The same thing is true of cocktails.

Choose a drink to match with pork – and why?
If I’m drinking wine, then a full-bodied rioja or something with a high grenache content. For beer, I’m usually aiming for a porter — nothing too chocolatey, but also fuller. Finally, I’m a huge fan of whiskey and vermouth cocktails with pork – something from the Manhattan family.
